All life on earth depends upon fungi in one form or another. Yet just over 50 years ago they were considered plants, even though they are more related to animals.

Fungi and their mycelia can be used to make meat alternatives, biocomposites, and even leather-like material. They are the decomposers and recyclers, the brewers and the bakers. We put them on pizza, and we shave them over gnocchi. They can be poison and medicine.
